Ingredients

• 4 cups chicken bone broth

• 1 inch piece of ginger, grated

• 2 cloves garlic, minced

• 2 tablespoons soy sauce

• 2 tablespoons rice vinegar

• 1/4 teaspoon chili flakes

• 2 green onions, chopped

• 3 eggs, lightly beaten

• 2 tablespoons cornstarch

• 2 tablespoons water

• Salt to taste

Instructions

  1. In a large pot, bring the chicken bone broth to a boil.
  2. Add the ginger, garlic, soy sauce, rice vinegar, sesame oil, white pepper, and chili flakes. Simmer for 10 minutes.
  3. Add the green onions and simmer for another 5 minutes.
  4. In a small bowl, whisk together the eggs, cornstarch, and water.
  5. Slowly pour the egg mixture into the soup while stirring the soup in a circular motion.
  6. Simmer the soup for an additional 5 minutes, stirring occasionally.
  7. Taste the soup and adjust seasoning with salt if needed.
  8. Serve the soup warm.

Notes:

For an added kick of flavor, feel free to sprinkle some chili oil or chopped fresh cilantro on top of the soup before serving.
