• 4 cloves garlic, minced

• 2 cups broccoli florets

• 1/2 teaspoon dried oregano

• 1/4 teaspoon salt

• 1/4 teaspoon pepper

• 8 ounces penne pasta

• 1/2 cup grated Parmesan cheese

• 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1-2 minutes.
  2. Add broccoli, oregano, salt and pepper to the skillet. Cook for 5 minutes until the broccoli is tender.
  3. Meanwhile, cook the penne according to package instructions.
  4. When the pasta is done, drain and add it to the skillet with the broccoli.
  5. Add Parmesan cheese and parsley to the skillet. Stir to combine.
  6. Serve immediately.

Notes:

If you are looking for a vegan option, you can substitute the Parmesan cheese with nutritional yeast. You can also substitute the penne pasta with whole wheat pasta.
