Ingredients

  • 4 quarts of chicken bone broth
  • 2 boneless skinless chicken breasts, chopped into small cubes
  • 2 tablespoons of sesame oil
  • 2 tablespoons of soy sauce
  • 2 tablespoons of mirin
  • 2 tablespoons of sugar
  • 2 tablespoons of garlic, minced
  • 2 tablespoons of ginger, minced
  • 3 tablespoons of white miso paste
  • 4 cups of bok choy, chopped
  • 2 packages of ramen noodles
  • 1/4 cup of scallions, chopped
  • Salt & pepper to taste

Instructions

  1. In a large pot, bring the chicken bone broth to a boil over high heat.
  2. Add in the chicken cubes, sesame oil, soy sauce, mirin, sugar, garlic and ginger and reduce the heat to medium. Simmer for 10 minutes.
  3. Add in the miso paste, bok choy and ramen noodles and continue to simmer for an additional 10 minutes.
  4. Add salt and pepper to taste.
  5. Remove from heat and stir in the scallions.
  6. Serve in individual bowls.

Notes:

Feel free to add more vegetables or proteins of your choice, such as mushrooms, tofu, or carrots.
