Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 8 cups bone broth
  • 4 ounces egg noodles
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add in the onion, carrots, celery, and garlic and cook for 3-4 minutes until the vegetables are softened.
  2. Add the chicken, thyme, and salt and pepper to the pot. Cook for 8-10 minutes until the chicken is cooked through.
  3. Add the bone broth and bring to a boil. Reduce heat to a simmer and add the egg noodles. Cook for 10 minutes until the noodles are tender.
  4. Remove from heat and stir in the parsley.
