Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 lb chicken breast, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 2 tablespoons tomato paste
  • 4 cups bone broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) black beans, drained and rinsed
  • 1/2 cup frozen corn
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and sauté for about 5 minutes, until softened.
  3. Add the chicken and spices and cook for about 5 minutes, until the chicken is cooked through.
  4. Add the tomato paste and stir to combine.
  5. Add the bone broth, diced tomatoes, black beans, and frozen corn and bring to a boil.
  6. Reduce the heat to a simmer and cook for about 25 minutes.
  7. Taste and adjust the seasoning with salt and pepper, if desired.
  8. Serve the soup with tortilla chips, cilantro, and lime wedges, if desired.

Notes:

This soup can also be made in the slow cooker. Simply add all the ingredients to the slow cooker and cook on low for 5-6 hours or on high for 3-4 hours.
