Ingredients

• 2 tablespoons olive oil

• 1 onion, diced

• 2 celery stalks, diced

• 2 carrots, diced

• 4 cloves garlic, minced

• 4 cups chicken or vegetable broth

• 1 cup bone broth

• 2 cups whole milk

• 1 teaspoon Italian seasoning

• 9 ounces cheese tortellini

• Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, celery, and carrots and cook until softened, about 5 minutes.
  3. Add the garlic and cook for an additional 1 minute.
  4. Add the broth, bone broth, milk, and Italian seasoning and bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes.
  6. Add the tortellini and simmer for an additional 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve warm.

Notes:

If you prefer a thicker soup, you can stir in a few tablespoons of cornstarch or flour before adding the tortellini.
