• 2 large yellow onions, diced

• 2 cloves garlic, minced

• 2 teaspoons dried thyme

• 1 teaspoon dried oregano

• 1 teaspoon dried basil

• 2 quarts of bone broth

• 2 tablespoons sherry

• Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onions and sauté until they are golden and translucent, about 8-10 minutes.
  2. Add the garlic, thyme, oregano, and basil to the pot. Sauté for another minute, stirring frequently.
  3. Add the bone broth and sherry to the pot and bring it to a boil.
  4. Reduce the heat to low and simmer for 30 minutes.
  5. Taste and season with salt and pepper as needed.
  6. Serve hot with a sprinkle of fresh parsley.

Notes:

For a vegan version of this soup, replace the bone broth with vegetable broth and substitute the sherry with white wine.
