Ingredients

• 2 tablespoons butter

• 4 large yellow onions, sliced

• 2 cloves garlic, minced

• 2 tablespoons all-purpose flour

• 2 teaspoons fresh thyme, chopped

• 2 teaspoons fresh oregano, chopped

• 4 cups beef bone broth

• 2 tablespoons balsamic vinegar

• 2 bay leaves

• Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. In a large skillet over medium heat, melt butter.
  3. Add onions and garlic and sauté until onions are soft and beginning to caramelize, about 8 minutes.
  4. Add flour, thyme and oregano and stir to combine.
  5. Place mixture into an oven-safe baking dish and pour bone broth over the top.
  6. Add balsamic vinegar, bay leaves and season with salt and pepper.
  7. Cover baking dish with foil and place in preheated oven.
  8. Cook for 1 hour, stirring occasionally.
  9. Remove from oven and serve hot.

Notes: If you are looking for a vegan version of this soup, you can substitute the butter with vegan butter, the beef bone broth with vegetable broth and the balsamic vinegar with a vegan substitute.
