• 2 cloves garlic, minced

• 1/2 cup onion, diced

• 2 boneless, skinless chicken breasts, sliced

• 2 tablespoons fish sauce

• 2 tablespoons soy sauce

• 2 tablespoons brown sugar

• 2 tablespoons lime juice

• 2 cups mung bean sprouts

• 2 cups cooked brown rice noodles

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the garlic and onion and cook until softened, about 5 minutes.
  3. Add the chicken and cook until golden brown and cooked through, about 7 minutes.
  4. In a small bowl, whisk together the fish sauce, soy sauce, brown sugar, and lime juice.
  5. Pour the sauce into the skillet and stir to combine.
  6. Add the bean sprouts and noodles and mix until everything is evenly coated in the sauce.
  7. Cook until the noodles are heated through and the sauce is thick and bubbly.
  8. Serve hot and enjoy!

Notes:

You can also use shrimp or tofu in place of the chicken for a vegetarian version. For a gluten-free version, use gluten-free soy sauce and fish sauce.
