Ingredients

  • 2 tablespoons olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 links smoked sausage, sliced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cups bone broth
  • 1 pound shrimp, peeled and deveined
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add bell peppers, onion, and garlic and cook for 5 minutes, stirring occasionally.
  3. Add sausage and cook for 5 minutes, stirring occasionally.
  4. Add cayenne pepper, sweet paprika, oregano, and thyme and stir to combine.
  5. Pour in bone broth and bring to a boil.
  6. Reduce heat to low and simmer for 15 minutes.
  7. Add shrimp and cook for 5 minutes, stirring occasionally.
  8. Season with salt and pepper, to taste.
  9. Serve hot with cooked white rice.

Notes:

For a vegetarian version, omit the sausage and double the amount of vegetables.
