Ingredients

• 1 tablespoon olive oil

• 1 onion, diced

• 1 red bell pepper, diced

• 2 cloves garlic, minced

• 1 pound ground beef

• 2 tablespoons chili powder

• 1 tablespoon ground cumin

• 1 teaspoon dried oregano

• 1 teaspoon smoked paprika

• 2 (15-ounce) cans kidney beans, drained and rinsed

• 2 cups beef bone broth

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. Add the garlic and cook until fragrant, about 1 minute.
  4. Add the ground beef and cook until browned, about 5 minutes.
  5. Add the chili powder, cumin, oregano, and paprika and cook until fragrant, about 1 minute.
  6. Add the beans and beef bone broth and stir to combine.
  7. Bring to a boil, reduce heat to low, and simmer until the chili is thickened, about 20 minutes.
  8. Serve warm.

Notes:

You can substitute ground turkey for the ground beef if desired.
