Ingredients

  • 2 tablespoons olive oil 
  • 4 boneless, skinless chicken breasts 
  • 1 onion, diced 
  • 2 cloves garlic, minced 
  • 2 cups bone broth 
  • 2 cups diced tomatoes 
  • 1 teaspoon dried oregano 
  • 1 teaspoon dried basil 
  • Salt and pepper to taste 
  • 2 cups cooked rice

Instructions

  1. Heat the olive oil in a large skillet over medium heat. 
  2. Add the chicken breasts to the skillet and cook until golden brown and cooked through, about 8 minutes per side. 
  3. Remove the chicken from the skillet and set aside. 
  4. Add the onion and garlic to the skillet and cook until softened, about 3 minutes. 
  5. Add the bone broth, diced tomatoes, oregano, and basil. Simmer for 8 minutes. 
  6. Add the chicken back to the skillet and simmer for 15-20 minutes. 
  7. Add salt and pepper to taste. 
  8. Serve the chicken and sauce over the cooked rice.

Notes:

You can substitute the bone broth with vegetable broth if desired.
